STEEL CUT OATS. I always add some ground flax seeds. Chopped apple and nuts are also welcome. Fresh peaches, in season, are best.

My favorite way to eat oatmeal (especially the steel cut oats) is with savory toppings like olive oil, sauteed onions, parmesan cheese, sauteed veggies, salty flavors...basically any way you'd eat rice or pasta. I cook up a large batch on Sunday afternoon and reheat servings in the a.m. Yummmy, filling, and healthy if you don't get carried away with the cheese...

Oatmeal:
Sometimes people don't realize that SALT is the secret ingredient of the tastiest oatmeal.
I agree on the Old Fashioned Oats (and, somehow, the Trader Joe's brand of oats is way better than Quaker).
Mix 1/2 cup milk and 1/2 cup water with a few drops of vanilla extract. Bring to a near boil and add 1/2 cup oats and a few pinches of salt. Simmer while stirring. When almost finished cooking, add some cinnamon and blue agave sweetener (just needs a tiny bit). I also like to add 1/2 granny smith apple (add it at the end so it doesn't lose its tart kick).
Enjoy!

Hi Annie,
This may be weird because you don't know me. I found your blog through my friend Jannell's blog up in AK. I LOVE it. But I digress to the subject of oatmeal, every morning I add 1/2 cup old fashioned quaker oats to about 1 cup of water, heat it in the microwave for 1.5 minutes add 1 shake of cinnamon and cover the top of the bowl with frozen mixed berries from Costco. mmm... sweet, healthy, and a serving of fruit.

Erin, your oatmeal suggestion sounds yummy.

I've made grilled cheese w/mushroom brie - super tasty... I suppose the bread just depends on your preference

Oatmeal: use old-fashioned oatmeal (not quick cook but the kind that cooks in 5 min vs 1 min), then stir in chopped dates, diced apple, crumble in some walnuts and add a dash or two of cinnamon. Then taste...if you want more sweetness then add a little brown sugar or maple syrup.

What I like to eat oatmeal-wise:

Oats (of course-although quinoa can be good too)
Sweet potato puree (like 1/8 cup...ish)
1/2 c-1 c almond milk (or soy, regular milk, etc.)
After cooking I stir in 1 tbsp of peanut butter
Sprinkle with cinnamon

Sometimes I add a little brown sugar and/or sliced almonds or walnuts... Sweet potatoes have a bit of natural sugar, but cinnamon is supposed to be good for regulating blood sugar, so it evens out : )

1. Abby is amazing! Just thinking about her makes me tear up.
2. The Time Travelers Wife is AWESOME, and you'll appreciate the movie a lot more by reading the book first.
2.5. Hopefully I'll finish Eclipse soon. I started it in March.
3. The Southwest sale is the best thing to happen to me this week. $25, unreal!
